Our Joyce Chen Sushi Knife is great for slicing sashimi when preparing a perfect sushi meal. A sushi knife allows for a clean uniform slice without tearing, especially important when cutting delicate rolled sushi or practically anything else. As with a Japanese sushi knife; the thin blade is sharpened on the right side only. A single edge cuts faster and more cleanly than a double edged knife. The blade is a high carbon molybdenum precision ground stainless steel and the sharp edge will not discolor or transfer a metallic taste.
